Fennel
A hardy perennial herb from the carrot family that is widely grown around the world for its fragrant leaves that are used in making absinthe and flavoring many dishes. The bulb can be chopped and eaten as a vegetable and is excellent in salads and the seeds are used as a potent flavoring as well. An extremely versatile and easy to grow plant.

Site and Soil: 1/2 day to full sun and well-drained soil.
Hardiness: Hardy to approx. -20° F, possibly lower when established.
Size at Maturity: 3-4 feet tall by 3-4 ft. wide
Pests & Diseases: We’ve not noticed it being bothered by pests and diseases.
