Bolivian Red Oca Tubers – Oxalis tuberosum

A traditional food native to the Andes region of South America. The Bolivian Red Oca tubers were re-introduced by Dr. Alan Kapuler, PhD. Dr. Kapuler is a public domain plant breeder of Peace Seeds in Corvallis. Dark red cylindrical tubers ranging from sweet to tangy. Tuberizing after equinox and harvested late fall, after frost. Round to cylindrical tubers are  1–6″ long. Sprawling succulent stems. Also grows similar to potatoes. Traditionally the tubers are exposed to sun and cold for several days after harvest. Therefore it increases sweetness. Light exposure also enriches the vivid colors.
