Popping sorghum Sorghum vulgare
This variety of sorghum can be popped like popcorn. The tiny seeds, when popped, are very white, crunchy, and obviously smaller than popcorn. They have a great nutty flavor.
The plants grow to heights of eight to ten feet or taller. The seed heads are somewhat more compact (ten to twelve inches) but have fewer fibers than broom corn sorghum varieties, and are looser than black-seeded sorghum.
For ornamental uses, seed heads can be harvested at any stage of development but for popping, wait until the seeds have reached full maturity before harvesting.
